Light moussaka

    aubergines, cut lengthways and thinly sliced

    blue cheese, crumbled

    fresh white breadcrumbs

Method

 
Heat 30 ml (2 tbsp) of the oil in a frying pan, add onions and garlic and sauté for 10 minutes, or until golden. Add mince and stir-fry for 10 minutes, or until browned. Add vegetables, tomato paste, sugar and marjoram, and simmer for 20 minutes. Season. Preheat oven to 200 ºC. Brush remaining oil over brinjal slices and grill under a preheated grill for 5 minutes on each side, until golden. Arrange a layer of brinjal slices in base of a 24 cm diameter ovenproof dish, spoon mince over and cover with remaining brinjal slices. Mix cheese, breadcrumbs and nuts, sprinkle on top and bake for 15 minutes. Serve with a salad of lettuce, cucumber, black olives and orange segments, dressed with an olive oil, lemon juice and buttermilk dressing.
