Light lemon pudding with spiced cream

    castor sugar

    lemon (juice and grated zest)

    self-raising flour

    light brown sugar

    honey
  • 125
    ml
    cream
  • 100
    ml
    natural yoghurt
  • 2
    ml
    ground cinnamon
 

Method

20-25 mins
 
Preheat oven to 180 ºC. Beat butter, castor sugar and lemon zest until light. Beat in 1 egg, then add flour and remaining egg. Beat at low speed until well combined. Spoon into a greased foil tart plate. Bake in the oven for 20 minutes or until golden and cooked through. Meanwhile, mix the lemon juice, light brown sugar and honey together. As soon as the tart comes out of the oven, pour mixture over. Allow to cool slightly. Beat cream until soft peaks form. Fold in yoghurt and cinnamon and serve a dollop on the side of each serving of pudding. Serves 6-8.
