Ingredients (8)

30 ml Sheridans gelatine
500 g white sugar
2,5 ml Cream of tartar
250 ml water
5 ml rosewater
Food colouring — pink
30 ml cornflour
30 ml icing sugar

Method:

Grease a 24 x 10cm silicone mould with nonstick spray.

1. Pour 45ml water over the gelatin and leave to sponge.

2. Put the sugar, cream of tartar and water in a saucepan
over medium heat. Stir continuously until the sugar has dissolved. Simmer for
10 minutes, then remove from the heat. Leave to cool for 30 minutes.

3. Stir the sponged gelatin into the syrup until dissolved.

4. Stir in the rosewater and a few drops of food colouring,
then transfer to the prepared silicone mould. Leave in the fridge for 2-3 hours
or until set.

To finish

5. Mix the cornflour and icing sugar and sift half the
mixture over a wooden chopping board. Transfer the Turkish delight to the board
and cut into cubes. Sift the rest of the cornflour mixture over and roll the
squares in it to coat.

6. Serve or store in an airtight container in the fridge.
