Spicy grilled fish with lemon

In Portugal, fresh fish is usually prepared simply but with lots of flavour. Here we use grey mullet (harders) but traditionally sardines are used in this recipe.

Ingredients (8)

6 fresh grey mullet or 12 whole sardines, gutted and cleaned
salt and freshly ground black pepper
20 ml paprika
5 ml peri-peri — sauce
10 ml dried rosemary
1 lemon — sliced
fresh parsley
lemon — cut into wedges

Method:

Preheat the oven to 230°C.
Put a wire rack on a large
baking sheet and grease
well with nonstick spray.

1. Rub the olive oil on the
skin side of the fish. Season with salt and freshly ground pepper.

2. Mix the paprika, periperi spice and rosemary
and sprinkle on the outside and in the body
cavities of the fish.
Arrange the fish on the
wire rack.

3. Tuck lemon slices inside each fish. Put the
baking sheet with wire
rack in the oven and grill
for 15-20 minutes or
until the fish is done.

To serve

4. Sprinkle fresh
parsley over (if using)
and serve with lemon
wedges.
