Ingredients (13)

1 kg store-bought bread dough
200 g cauliflower
125 ml mozzarella cheese — grated
125 ml cheddar cheese — grated
60 ml tomato sauce
60 ml chutney
125 ml mozzarella cheese — grated
1 onion — small, chopped
125 ml peas — frozen
125 ml sweetcorn — frozen
1 peppers — red and yellow, diced
200 g bacon — dieced, fried
125 ml cheddar cheese — grated

Method:

Preheat the oven to 200°C.

Lightly dust four large baking sheets with flour.

1 BASE

Dust the work surface with flour.

Divide the dough into four equal parts.

Roll out each piece to the size of a dinner plate and put on the baking trays.

2 Break the cauliflower into florets and put in a food processor.

Blitz until it resembles breadcrumbs.

Mix the cauliflower and both cheeses.

Divide the mixture into four equal portions.

Sprinkle each portion in a ring around each base about 1cm from the edge.

Fold the edges of the dough over the cauliflower mixture, pinching down to seal.

Bake for 5 minutes then leave to cool.

3 TOMATO SAUCE

Mix the sauces together and spread on each pizza base, making sure not to touch the stuffed crust.

4 TOPPING

Sprinkle some of the mozzarella on each pizza, followed by the onion, peas, corn, peppers and bacon.

Sprinkle the cheddar cheese over and bake for 10-12 minutes, until the base is golden brown and the cheese has melted.
