pears — peeled and cored
Granny Smith apples — peeled and cored
lemon — zest and juice
125 ml water
250 ml mixed berries — frozen
60 ml sugar — or honey
500 g box scone mixture — prepared according to the packet instructions.

whipped cream or plain yoghurt (optional)

Method:

Preheat
the oven to 200°C.Grease a large ovenproof dish with nonstick spray.

1. Filling

Slice the pears and apples into
rough chunks and put in a saucepan. Add the lemon juice and zest, as well as
the water. Bring to the boil, then simmer over low heat for 10 minutes.

2. Add the berries (if using), as
well as the sugar or honey and simmer for another 5 minutes. Transfer the fruit
to the prepared ovenproof dish.

3. Dough

Roll the prepared scone mixture
into balls about the size of tennis balls and arrange close together on the
fruit in the dish. Lightly brush with milk and put the dish on a baking sheet.

4. Bake the pudding for 15-20
minutes or until the dough is golden brown and cooked.

5. To serve

Serve warm with whipped cream or
plain yoghurt (if using).
