Parmesan drumsticks

This dish is loaded with crunch and flavour. It works with almost any cut of chicken, but is especially delicious with drumsticks.

Ingredients (11)

8 chicken — drumsticks
10 ml paprika — smoked
5 ml dried chilli flakes
salt and freshly ground black pepper
120 g butter — melted and cooled
6 garlic — cloves, crushed
fresh parsley — chopped
30-40 g parmesan cheese — finely grated
to serve — to serve
fresh coriander
potato chips — or wedges

Method:

Preheat
the oven to 200°C.

1. Brush the chicken with the olive
oil. In a small bowl combine the paprika and chilli flakes with salt and pepper
then rub all over the chicken.

2. Put the
chicken on a baking sheet and roast for 35 minutes.

3. Combine
the butter, garlic, parsley and Parmesan cheese in large mixing bowl.

4. Once the
chicken is cooked, toss it in the butter mixture until well coated.

5. To serve: Garnish with fresh
coriander (if using) and serve immediately with potato chips or wedges.
