You can use broccoli florets instead of the cucumber. And replace the boiled eggs with crumbled feta cheese if you like.

Ingredients (8)

cos lettuce
hard boiled eggs — shelled and halved
250 g pickled dried tomatoes with their pickling liquid — half of the liquid
cucumber — halved lengthways, deseeded and chopped
radishes — thinly sliced
red onion — finely chopped
avocado — cubed
125 g cherry tomatoes — whole or halved

Method:

1 Put the lettuce leaves on a salad platter. Arrange the boiled eggs, pickled dried tomatoes, cucumber, radishes, onion, avocado cubes and fresh tomatoes on top.

2 Use the pickling liquid as a dressing for the salad.
