Meatballs and tomato sauce

Ingredients (12)

400 g beef mince — lean
1 eggs — whisked
15 ml tomato purée
1 onion — small, grated
10 ml fresh parsley — finely chopped
50 ml breadcrumbs — dried
50 g butter — frozen and grated
sea salt and freshly ground black pepper
50 ml fresh chillies — 573
400 ml basic tomato sauce — GROUPING
to serve — to serve
cooked spaghetti or linguine and grated parmesan cheese

Method:

1. Mix all the ingredients, except the olive oil and prepared tomato sauce.

2. Put the mince mixture in a bowl and chill for about 30 minutes.

3. Remove from the fridge and roll the meat mixture into 2cm balls – about 24.

4. Preheat the oven to 180°C. Heat the olive oil in a pan over medium heat and sauté the meatballs until golden. Remove from the pan and transfer to an ovenproof casserole dish.

5. Pour the tomato sauce over the meatballs and bake for 15-20 minutes or until the sauce is bubbling.

6. To serve: Serve over cooked pasta with a little grated Parmesan cheese for sprinkling on top.
