Ingredients (19)

1 kg potjiekos or stewing beef
salt and freshly ground black pepper
250 ml Buttermilk
4 garlic — cloves, bruised
FILLING
30 ml oil
2 onion — chopped
2 garlic — cloves, chopped
2 celery stalks — roughly chopped
4 carrots — chopped
2 bay leaves
30 ml flour
500 ml stock — beef
2,5 ml cayenne pepper
500 ml water

1 puff pastry — roll
1 egg yolk — lightly whisked
15 ml water
5 ml each cumin and coriander

Method:

Keep a
pie dish or oven-proof dish handy.

1. Season
the meat well with salt and freshly ground pepper. Transfer to a marinating
dish and pour the amasi over. Tuck the garlic in between the meat pieces and
mix everything well. Cover and marinate overnight in the fridge.

2. Filling: Heat the oil in a deep saucepan or
pot and fry the onions and garlic until fragrant. Add the celery, carrots and bay
leaves and stir-fry for 5 minutes.

3. Remove the meat from the marinade and add to the
veggies in the pot. Sprinkle the flour over and mix well.

4. Pour in the stock and add the spices. Add the
water and bring to the boil.

5. Cook the meat slowly for 1 hour or until the meat
is tender. Remove from the heat and discard any bones. Season with more salt
and freshly ground pepper if you like.

6. Pie: Preheat the oven to 200°C. Transfer the pie
filling to the pie dish or oven proof dish and cover with the puff pastry.
Lightly brush the egg mixture over the pastry. Cut a slit in the top and bake
for 25-30 minutes or until the pastry is golden brown and done
