Ingredients (5)

50 g pumpkin seeds
50 g sunflower oil
Granny Smith apples — cored
500 g bran muffin mix — prepared according to packet instructions
honey

Method:

Preheat the oven to 180°C.

Grease 12-18 hollows of a muffin tin with nonstick spray and line with paper baking cups.

1. Toast the pumpkin and sunflower seeds in a dry pan until the pumpkin seeds start bursting open and the sunflower seeds start changing colour. Remove from the pan, mix with the nuts and set aside to cool.

2. Grate 2 of the apples and slice the other one. Keep a handful of the nuts-and-seeds mixture aside and mix the rest into the muffin batter along with the grated apple.

3. Divide the batter between the muffin hollows, sprinkle the rest of the nuts and seeds over and press apple slices into the top. Bake for 25-30 minutes until golden brown and cooked – a testing skewer inserted into the middle of a muffin should come out clean.

4. Leave the muffins to cool for 10 minutes in the tin, then transfer to a wire rack and leave to cool.

5. To serve

Serve with the honey.
