Fruit and chocolate sheet cake

The moist sheet cake is packed with protein thanks to the eggs and almonds, and no wheat flour is used.

Ingredients (7)

6 eggs — seperated
150 g xylitol — mixure,stevia, or brown suger and xylitol
50 g cocoa powder
salt — just a pinch
125 ml almonds — ground
250 g strawberries — blueberries, cut in smaller pieces
50 g almonds — flaked

Method:

Preheat
the oven to 180ºC. Grease a 20cm square cake tin with non-stick spray and line with
baking paper. Grease again and dust cocoa powder over.

1. Whisk the egg yolks and sweetener together
until pale and thick. Sift the cocoa powder and salt over and fold in.

2. Fold in the 
almonds.

3. Whisk the egg whites into stiff peaks and fold
into the batter.

4. Transfer the mixture to the prepared baking
tin.

5. Sprinkle the fruit over, wait until it’s
sunken into the batter, then sprinkle the almond flakes over.

6. Bake
for 20 minutes or until done but still spongy. Leave to cool and cut into
squares
