Ingredients (17)

500 g chicken — wings
salt and freshly ground black pepper
flour — for dusting
500 ml Buttermilk
15 ml salt
30 ml salt — seasoning
15 ml freshly ground black pepper
45 ml cayenne pepper
250 ml flour
oil — for deep frying
60 ml hot sauce
30 ml tomato sauce
30 ml chutney
30 ml mustard sauce
30 ml vinegar
30 ml brown sugar
yoghurt dip

Method:

Cut off the wing tip of each wing.Then season the winglet with salt and pepper, dust with some flour and put into a bowl.

Cover with the buttermilk and put in the fridge for 30 minutes.

Mix the two types of salt, two types of pepper and the flour, then dip the wings into the flour mixture and coat well.

Heat the oil and fry the wings for 4-6 minutes until crisp and cooked.

Heat the sauces, vinegar and sugar in a saucepan and toss the cooked wings through the sauce.

Serve with a yoghurt dip.
