Crumb-crusted sirloin with cream sauce

Ingredients (17)

4 sirloin steaks
salt and freshly ground black pepper
15 ml oil
250 ml breadcrumbs — fresh
1 feta cheese
60 ml sunflower seeds — toasted
15 ml dried mixed herbs
15 ml butter
15 ml fresh chillies — 573
15 ml oil
1 onion — sliced
2 garlic — cloves, finely chopped
250 g mushrooms — sliced
30 ml brandy — optional
5 ml flour
250 ml cream
salt and freshly ground black pepper

Method:

Preheat the oven to 230°C. Keep a baking sheet handy.

1. Season the steaks both sides with the salt and pepper then
coat with the oil.

2. Heat a large pan and seal the steaks in batches , making
sure both sides have a golden crust.

3. Transfer the steaks to the baking sheet and set aside.

Crust

4. Put all the ingredients in the bowl of a food
processor and pulse until coarsely chopped.

5. Cover the steaks with the crumb mixture and bake in the
preheated oven for 7-10 minutes or until done to your liking. Remove from the
oven and rest for 10 minutes.

Sauce

6. In the meantime, prepare the sauce. Heat the oil in
a pan and fry the onion and garlic until soft. Add the mushrooms and stir-fry
until done.

7. Add the brandy (if using) and simmer for a minute.
Sprinkle the flour over and stir through.

8. Add the cream and stir continuously until the sauce has
thickened. Add salt and pepper.

9. To serve Cut the steak to your liking and serve with the
sauce and side dishes of your choice.
