Ingredients (10)

4 gem squash — cut into halves
15 ml fresh chillies — 573
5 ml garlic — cloves, crushed
3 ml coriander — ground
3 ml lemon and pepper spice
1 spinach — washed and chopped
125 ml peas — tinned or frozen
65 ml cream — fresh
15 ml flour — cake wheat
salt — to taste

Method:

Steam gem squash in boiling water until
soft.

Heat olive oil, add garlic, coriander and lemon
and pepper, allow the aroma to infuse.

Add chopped spinach, steam on medium heat
for five minutes or until wilted and all water is absorbed.

Add the peas and fresh cream, cook for
five minutes, add the flour to thicken and remove from heat.

To assemble; place gem squash on a baking
tray.

Spoon a generous amount of spinach mixture
into each gem squash.

Sprinkle with cheese and place under the
grill until just melted and golden.
