Chocolate fudge brownies

Ingredients (9)

250 g butter
150 g milk chocolate
65 ml cocoa powder
100 g castor sugar
10 ml vanilla — essence
3 eggs — large
160 g flour — cake wheat
chocolate chips
pecan nuts — chopped

Method:

Preheat oven to 180°C.

Grease and line a 30cm
x 20cm baking tin.

In a medium-large
saucepan, melt butter with the
chopped chocolate over low
heat, whisking occasionally until smooth and melted.

Sprinkle in cocoa
powder and whisk to combine.

Remove the pan from
heat and allow to cool for about 5 minutes.

Stir in sugar and
vanilla essence until just combined.

Stir in eggs, one at a
time.

Gently stir in the
flour.

When just combined,
add the chocolate chips and pecan nuts.

Stir just until
combined.

Pour batter into the baking
pan.

Spread to even out the
top and sprinkle with remaining chopped nuts.

Bake in the oven for
40 minutes and check by inserting a skewer into the middle.

If it is still too soft,
return to the oven for a further 5 to 10 minutes.

Allow to cool completely
and cut into fingers or
squares.

When still warm, the
brownies will seem too soft and sticky.

As they cool, they
will firm up.
