Chicken skewers with seed and nut pesto

Calamari – steamed, not deep-fried – is a good source of omega-3 fatty acids. Peanuts are legumes but as nutritious as tree nuts. Walnuts are a good source of omega-3. Studies suggest a handful of nuts a day can lower cholesterol and help you lose belly fat.

Ingredients (12)

15 ml each chopped garlic, freshly ground pepper, smoked paprika and dried oregano
5 ml turmeric
5 ml vinegar — balsamic
chicken breast fillets — cubed
salt
olive oil
wooden skewers
120 g salad greens
garlic — cloves, crushed
lemon — zest and juice
150 g mixture of walnuts, toasted sunflower seeds and toasted pumpkin seeds
90 g roughly chopped cape gooseberries and blueberries

Method:

1 Marinade

Mix the ingredients.

2 Chicken

Put the chicken in a bowl, pour the marinade over and leave
to marinate for 30 minutes.  Season with
salt.

3 Fry the chicken in a little olive oil until just done.  Put each chicken cube on a skewer.

4 PESTO

Put the greens and garlic in the bowl of a food processor and
pulse until smooth. Add the lemon juice, zest and olive oil and pulse until just
combined.

5 Add the nuts and chop roughly.

6 Add the gooseberries and blueberries and mix through.

7 Serve the chicken with the pesto.
