Chicken and bean chilli soup

Ingredients (9)

6 stock — chicken
4 chicken — cooked, shredded
2 haricot beans — can, drained
125 ml pesto — basil
5 ml coriander — ground
5 ml cumin — ground
1 avocado
fresh coriander — chopped
50 g cheddar cheese — grated

Method:

Add chicken stock, chicken, beans, half the pesto, coriander and cumin into a medium saucepan and stir to combine.

Bring to a boil and simmer gently for 20 minutes.

Ladle soup into bowls and top with diced avocado, remaining pesto, chopped coriander and grated cheese.

Serve warm.
