I love pap. It’s versatile and it’s the perfect bowl of comfort food. Instead of cooking it in water I use stock for more flavour. The spicy tomatoes are an updated version of my mom’s ushatini.

Method:

1. Mix the mealie meal with 125ml (½c) cold stock. Bring the remaining
stock to the boil in a covered pot, then add the mealie meal mixture. Cover and
simmer for at least 30 minutes, stirring occasionally.

2. Heat
the oil in a sauce-pan, then sauté the onion and pepper until softened. Add the
paprika, cayenne pepper and tomatoes. Cook over gentle heat for 5 minutes or
until the tomatoes start to split. Stir in the sugar, add salt and pepper,
cover and cook for a further 5 minutes.

3. Stir
most of the cheese into the pap, check the seasoning, transfer to a bowl and
top with the tomatoes
and remaining cheese.
