Beefy tomato soup

Ingredients (15)

300 g potjiekos beef — diced
salt and freshly ground black pepper
60 ml flour
30 ml oil
1 onion — chopped
2 garlic — cloves, crushed
100 g tomato paste
1 l stock — beef
2 tinned tomatoes — chopped
5 ml paprika — smoked
2,5 ml cayenne pepper
15 ml dried mixed herbs
lemon juice
TO FINISH
fresh parsley — chopped
1 lemon — cut into wedges

Method:

1. Season
the meat with the salt and pepper. Roll in the flour to coat and shake off any excess.

2. Heat
the oil in a large saucepan and fry the onion and garlic until fragrant. Add
the tomato paste and stir-fry for a minute.

3. Add
the meat and stir-fry for 10 minutes. Add the stock and simmer for 45 minutes
or until the meat is tender, stirring occasionally and adding water if needed.

4. Add
the tomatoes, spices, herbs and lemon juice and season with more salt and
pepper if needed.

5. To
finish:
Sprinkle the parsley over and serve with the lemon wedges.
