Lettuce stamppot

  • 200
    g
    piece back bacon
  • 250
    g
    potatoes, peeled and roughly chopped
  • 300
    ml
    milk, warmed
  • salt and black pepper
  • 250
    g
    iceberg lettuce, finely chopped
  • 30
    g
    onion, finely chopped
  • 60
    g
    Cheddar cheese, cubed
 

Method

 
Cook the bacon in a pot of water for 30 minutes, and add the peeled potatoes. Cook until potatoes are tender. Remove bacon from pot and cube. Drain off cooking liquid and reserve. Mash potatoes with milk and seasoning to a stiff purée. Add more of reserved cooking liquid if needed. Stir in lettuce, bacon, onion and cheese. Serve immediately.
