Lettuce cups with shrimp salad

This dish is easy to assemble and beautiful to serve.

Ingredients

 
  • 200
    g
    Norwegian shrimp, cooked
  • 6
    red salad onions, finely chopped
  • 3
    Israeli cucumbers, finely chopped
  • 1/3
    cup
    mayonnaise
  • Juice and zest of 1 lime
  • Sea salt and black pepper
  • 2-3
    heads baby gem lettuce
  • Fresh mint and coriander, to garnish
  • Lime wedges, to serve

Method

 
Combine the shrimp, onions, cucumber, mayonnaise, lime juice and zest in a bowl and season.

Separate the lettuce leaves. Spoon dollops of the mixture into the leaves, garnish with mint and coriander, and serve with lime wedges.

Carving meat
Always allow your roast to rest for 5 to 15 minutes before carving so that the juices can be reabsorbed and the meat presents an even surface when sliced. Use a short- or long-bladed knife, and a two-pronged carving fork with a guard. To prevent the meat from losing juice, steady it with the flat of the fork, rather than piercing.
