Ingredients

    oil
  • onion, sliced
  • 20
    ml
    medium curry powder
  • 250
    ml
    chicken stock
  • 10
    ml
    tomato paste
  • 30
    ml
    apricot jam
  • 30
    g
    mayonnaise
  • 6
    bananas, sliced
  • 750
    ml
    cooked rice
  • 25
    ml
    parsley, chopped
  • 1
    kg
    cooked chicken portions
 

Method

15 mins
 
Heat the oil in a pan and sauté the onion until soft.
Add the curry powder and fry for about 1 minute.
Blend the chicken stock, tomato paste and apricot jam and slowly add the curry mixture.
Stir continuously until the mixture comes to the boil.
Reduce the heat and simmer for 10 minutes.
Add the mayonnaise and mix well. Add the banana slices and mix lightly.
Combine the rice and parsley and transfer to a serving dish.
Place the chicken portions on top and pour over the sauce.
Serve hot or cold with tomato salad and chutney.
