Lentils with spinach (Cheera kootu)

    bunch spinach, washed and spines removed
  • 5
    ml
    turmeric
  • 200
    g
    red lentils
  • salt
  • 200
    ml
    coconut milk
  • 7
    ml
    ground cumin
  • oil
  • 5
    ml
    mustard seeds
  • 1
    sprig curry leaves
 

Method

 
Shred the spinach.
Add the turmeric to the lentils and cook in water to cover until tender.
Drain if necessary and season with salt.
Add the spinach and heat until soft.
Process the coconut and cumin to form a paste.
Add to the spinach mixture.
Heat a little oil and toast the mustard seeds and curry leaves until the seeds begin to pop.
Sprinkle over the spinach mixture.
