Lentils: how to prepare

    ml
    lentils, uncooked
 

Method

 
Pick over lentils and remove small sticks and stones. Wash well, then place in a saucepan. Cover with water and boil for 20 to 25 minutes, or until cooked but not mushy. Rinse well. You will need 125 ml (1/2 cup) uncooked brown lentils to make 250 ml (1 cup) cooked. Use in mushroom and brinjal salad (see recipe).
