Lentil soup

Ingredients (12)

45 ml butter
2 onion — large, peeled and chopped
1 garlic — cloves, chopped
4 carrots — peeled and chopped
3 celery stalks
500 ml lentils
2 l stock — chicken
2 bay leaves
2 ml dried basil
15 ml dried parsley
15 ml lemon juice
125 g bacon — chopped

Method:

Heat the butter, add the onions and fry over medium heat till brown.
Add the garlic, carrots and celery and sauté for 4 minutes.
Add the lentils, chicken stock, bay leaves, basil parsley and lemon juice and simmer on low heat for 2 hours.
Fry the bacon, till crispy and add to the soup just before serving.
