Lentil salad

    uncooked brown lentils
  • 1
    onion, sliced
  • 1
    clove garlic, crushed
  • 2
    stalks celery, chopped
  • 3
    carrots, cut into julienne strips
  • oil
  • 2
    tomatoes, cut into wedges (optional)
  • DRESSING
  • 125
    ml
    oil
  • 125
    ml
    grape vinegar
  • 2
    ml
    French mustard
  • 25
    ml
    sugar
  • 25
    ml
    chopped parsley
  • salt and pepper to taste
 

Method

 
Rinse the lentils well and remove any impurities. Boil in salted water until soft. Drain and cool. Sauté the onion, garlic, celery and carrot in oil until nearly soft. Remove from the pan and mix with the lentils. Spoon the mixture into a serving bowl and decorate with tomato wedges. Place all the ingredients for the dressing in a bottle with a lid and shake well. Pour over the salad and chill until just before serving. Serves 4.
