Lentil hotpot

    olive oil
  • 1
    onion, chopped
  • 10

    crushed garlic
  • 5
    ml
    ground coriander
  • 5
    ml
    ground cumin
  • 3
    ml
    cinnamon
  • 3
    ml
    ground turmeric
  • 500
    g
    potatoes, peeled and cut into chunks
  • 3
    large carrots, peeled and cut into chunks
  • 200
    g
    lentils
  • 1
    Litres
    beef stock
  • 410
    g
    tin tomatoes
  • 6
    frankfurters, diagonally sliced
 

Method

30 minutes
 
Heat the oil in a large frying pan and fry the onion and garlic. Add the spices and fry for one minute.
Add the potatoes, carrots and lentils. Pour over the stock and stir in the tomatoes.
Bring to the boil, then reduce heat and simmer, stirring occasionally, until the vegetables are cooked.
Add frankfurters five minutes before serving.
