Lentil burgers

Ingredients (11)

400 g lentils — dried
1 Tbs fresh chillies — 573
1 onion — finely chopped
2 cloves garlic — cloves, crushed
2 Tbs dukkah
1 eggs — lightly beaten
salt and freshly ground black pepper
10 g fresh parsley — finely chopped
1/2 cup breadcrumbs — fresh
1 feta cheese — crumbled
sunflower oil — to fry

Method:

How to cook dried lentils:

Rinse lentils in cold running water, drain and set aside.
Place 1 part lentils to 3 parts water into a pot and bring to the boil.
Reduce heat slightly and simmer for about 30 minutes or until tender.


To make lentil burgers:

Heat oil in a pan and gently sauté onions and garlic until soft and translucent.
Add dukkah spice and fry for a further 2 minutes until golden.

Remove from heat and place into a bowl together with the lentils, parsley, breadcrumbs and feta. Mix lightly to combine and season with salt and pepper. Allow mixture to cool completely.

Add egg and stir until mixture just comes together.
Shape into 4 large patties and refrigerate for an hour to firm slightly.

Heat a little oil in a frying pan and fry lentil patties for about 2-3 minutes on each side until golden brown.

Serve topped with chutney and avocado.
