    sunflower oil

    large onion, chopped

    brown lentils, soaked overnight and rinsed
  • 2
    large tomatoes, chopped
  • 30

    ground turmeric

    OR medium curry powder

    vegetable stock

    frozen peas
  • 2
    green apples, cored and diced
  • 200

    dried sultanas

    fat-free plain yoghurt

    ml
    low-fat milk
  • 1
    large egg
 

Method

Oven temperature:180 ° C1. Heat the oil in a large saucepan. Add the onion and cook until soft. Stir in the lentils, tomatoes and turmeric and cook for two minutes.
2. Add the stock and simmer for about 20 minutes or until the lentils are soft. Remove from the heat, stir in the peas, apples, sultanas and 40 ml of the yoghurt. Season to taste. Spoon into the foil containers.
3. Beat the rest of the yoghurt with the egg and pour over each container. Bake in a preheated oven for about 20 minutes or until the topping is set and golden. Leave to cool completely before sealing.
