Ingredients (9)

250.00 ml lentils — red or brown
1.00 stock cube — chicken
5.00 bacon — rashers, chopped
1.00 onion — large, sliced
2.00 garlic — cloves, crushed
200.00 g button mushrooms — sliced
200.00 g broccoli — broken into florets
1.00 baked beans in tomato sauce
salt and freshly ground black pepper — to taste

Method:

Boil lentils in the chicken stock until soft. Drain.
Fry the bacon, add the onion and garlic and stir-fry until soft. Add the vegetables and stir-fry until soft but still slightly crisp. Add the lentils and baked beans and heat until warmed through. Season to taste with salt and pepper.
Serve with mashed potato.
Serves 4.
