Lentil and vegetable dish

Ingredients

    ml
    red or brown lentils, sorted and rinsed
  • 1
    chicken stock cube dissolved in 500 ml boiling water
  • 5
    rashers bacon, cut into smaller pieces
  • 1
    large onion, sliced
  • 2
    cloves garlic, crushed
  • 200
    g
    fresh button mushrooms, sliced
  • 200
    g
    broccoli, broken into florets
  • 1
    small tin baked beans in tomato sauce
  • salt and black pepper to taste
 

Method

+/- 30 min
 
Boil lentils in the chicken stock until soft. Drain. Fry the bacon, add the onion and garlic and stir-fry until soft. Add the vegetables and stir-fry until soft but still slightly crisp. Add the lentils and baked beans and heat until warmed through. Season to taste with salt and pepper. Serve with mashed potato. Serves 4.
