Lentil and rice salad

Ingredients

  • 200
    g
    brown lentils, sorted and cooked until soft
  • 150
    g
    brown rice, cooked until soft
  • double quantity Hydro salad dressing (see recipe)
  • 1
    green pepper, seeded and diced
  • 15
    cm
    piece English cucumber, diced
  • 100
    g
    fresh button mushrooms, sliced
  • 4
    spring onions, chopped
  • few whole walnuts
  • plain yoghurt (optional)
 

Method

20-30 min
 
Combine the lentils and brown rice and pour over the salad dressing while the mixture is still hot. Cool. Add the remaining salad ingredients, except the yoghurt and turn into a salad bowl. Serve with plain yoghurt, if desired. Serves 4-6.
