Ingredients (9)

200.00 g lentils — brown
150.00 g rice — brown
salad dressing
1.00 green pepper — deseeded and diced
15.00 cm cucumber — diced
100.00 g button mushrooms — sliced
4.00 spring onion — chopped
walnuts
yoghurt — optional

Method:

Combine the lentils and brown rice and pour over the salad dressing while the mixture is still hot. Cool. Add the remaining salad ingredients, except the yoghurt and turn into a salad bowl. Serve with plain yoghurt, if desired.
Serves 4-6.
