Lentil and bean salad

    g
    brown lentils
  • salt
  • 1
    onion, chopped
  • 400
    g
    can butter beans
  • 400
    g
    can red kidney beans, drained
  • 400
    g
    can chickpeas, drained (optional)
  • 410
    g
    can green beans, drained
  • 250
    ml
    sultanas
  • pinch each cumin and paprika
  • herb dressing (see recipe for Herbed rice salad)
 

Method

 
Cook the brown lentils in boiling water until soft. Drain.
Rinse under cold running water. Season with salt.
Add the chopped onion and drained butter beans, kidney beans, chickpeas, green beans and sultanas.
Add the cumin and paprika to the dressing.
Pour over the salad and chill until needed.
