Ingredients (4)

30.00 lemons
3.00 kg sugar
60.00 ml Citric acid
2.00 Litres water — boiled

Method:

Grate the rind of 15 lemons and squeeze the juice from all 30 lemons. Combine and add the sugar. Blend the citric acid with the boiling water and add to the lemon juice mixture. Stir until the sugar has dissolved (but do not boil). Strain through a clean cloth and bottle immediately. Seal the bottle tops by dipping them in melted wax. Makes 5 litres syrup.
