Lemon sorbet

    lemons, grated peel and juice
  • 140
    g
    sugar
  • 565
    ml
    water
  • 1
    egg white
 

Method

 
Place lemon peel, sugar and water in a heavy-based saucepan. Dissolve sugar over low heat then boil liquid rapidly for about 5 minutes. Remove from stove and allow to cool. Add lemon juice and strain. Freeze until ice crystals form, 2 to 3 hours. Whisk egg white until stiff and fold into mixture. Return to freezer until firm but not rock-hard. Scoop into individual frosted glasses and spoon candied lemon strips over.
