    ml
    gelatine
  • 65
    ml
    cold water
  • 250
    ml
    hot water
  • 250
    ml
    sugar
  • 65
    ml
    lemon juice
  • 0.50
    lemon, the grated rind
  • 5
    ml
    vanilla essence
 

Method

 
Sprinkle the gelatine over the cold water and leave to sponge, then dissolve in the hot water.
Stir in the sugar, lemon juice and grated lemon rind and strain through a fine sieve.
Chill the liquid until it starts to set, then beat with a wire whisk until light and frothy.
Whisk the egg whites until stiff and fold into the gelatine mixture.Serve with thin custard if desired.
