    cake flour
  • 85
    ml
    icing sugar
  • 375
    ml
    sugar
  • 1
    ml
    salt
  • 250
    g
    butter
  • 250
    ml
    lemon curd
  • icing sugar for dusting
 

Method

 
Place flour, sugars and salt in a food processor. Pulse until combined. Add butter and pulse until mixture looks like breadcrumbs. Press together to form a ball, cover and chill for 2 hours. Roll dough out to 5 mm thick on a lightly floured surface. Using a biscuit cutter, cut out 24 shapes. Then cut out centre of 8 shapes, using a small biscuit cutter. Place on a greased baking sheet and bake at 180 ºC until golden brown, about 10 to 15 minutes. Cool, then refrigerate until set. TO ASSEMBLE: Place 8 biscuits on a platter, top with a spoonful of lemon curd, place another biscuit on top and another dollop of lemon curd. Finally place the remaining 8 cut out biscuits on top. Press down carefully and dust with icing sugar.
