Lemon pickle

Ingredients

    kg
    lemons
  • 100
    g
    salt
  • 500
    g
    sugar
  • 3
    ml
    each, ground cumin and cinnamon
  • 2
    ml
    ground cloves
  • 5
    ml
    whole cardamom pods
  • 6
    whole star anise
  • 15
    ml
    dried crushed chillies
  • 50
    ml
    grated fresh ginger
  • lemon slices
 

Method

 
Soak lemons in cold water overnight. Drain, remove ends and slice lemons thinly. Sprinkle with salt, cover and leave for 12 hours. Drain off liquid and heat with sugar, ground cumin, cinnamon, cloves, whole cardomon pods and whole star anise. Boil for two minutes, then cool. Add crushed chillies, grated fresh ginger and lemon slices. Pack into sterilised jars and seal well. Enjoy after four to five weeks. Delicious with fish, chicken or cold meats and perfect as a Christmas gift.
