Lemon meringue tartlets

    Madeira loaf
  • 5
    egg whites
  • 85
    ml
    castor sugar
  • 150
    ml
    ready made lemon curd
  • 397
    g
    Nestlé condensed milk
  • 30
    ml
    lemon juice
  • icing sugar for dusting
 

Method

 
Preheat oven to 180 ºC. Grease 4 springform tartlet pans, 8 cm in diameter. Cut 4 rounds from Madeira loaf and press 1 into each pan. To make meringue, beat egg whites and castor sugar until soft peaks form. Mix lemon curd, condensed milk and lemon juice. Spread over sponge bases. Divide meringue equally between pans and spread evenly to cover filling. Bake for 10 minutes, or until meringue is lightly browned. Cool for at least 30 minutes. Remove tartlets from pans, dust with icing sugar and serve. Serves 4.
