Lemon meringue ice cream

Time 15 minutes plus freezing time

Ingredients

  • 300
    ml
    cream, chilled
  • 250
    g
    lemon curd
  • 4
    meringue nests, roughly chopped
 

Method

 
Whip the cream until stiff and stir in about 100 g of the lemon curd.
Fold in the meringue and gently stir in the remaining lemon curd. Don?t overmix.
Spoon into a freezer container and freeze until hard.
Makes about 1,5 litres.
