    castor sugar

    eggs, beaten

    oil

    ml
    lemon rind, grated
  • 375
    ml
    self-raising flour
  • 1
    ml
    salt
  • 125
    ml
    sour milk (or buttermilk)
  • SYRUP
  • 50
    g
    sugar
  • 20
    ml
    lemon juice
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease a medium-sized-loaf tin with margarine. Cream the castor sugar and eggs together until fluffy and pale yellow. Add the oil and lemon rind and beat well. Sift the dry ingredients together and add to the egg mixture, alternating with the milk. Mix well. Turn into the prepared loaf tin. Bake for 40 minutes or until the loaf is golden brown on top. Blend the sugar and lemon juice and bring to the boil. Pour the syrup over the loaf as soon as it comes out of the oven.
