Ingredients (4)

3.00 lemons — zest and juice
350.00 ml icing sugar
250.00 ml cream — thick, chilled
300.00 ml yoghurt — vanilla flavoured

Method:

Mix the lemon juice and rind with the icing sugar until well blended. Whip the cream until stiff and fold in the yoghurt. Add the lemon mixture and fold in lightly. Turn into a freezer bowl and freeze for 4 hours or overnight until hard.
