Ingredients

  • 3
    lemons (juice and grated rind)
  • 350
    ml
    icing sugar
  • 250
    ml
    thick cream, chilled
  • 300
    ml
    Vanilla Flake flavoured yoghurt
 

Method

 
Mix the lemon juice and rind with the icing sugar until well blended. Whip the cream until stiff and fold in the yoghurt. Add the lemon mixture and fold in lightly. Turn into a freezer bowl and freeze for 4 hours or overnight until hard.
