Lemon grass and vegetable stir-fry

    red pepper, seeded and cut into strips

    yellow pepper, seeded and cut into strips

    carrot, peeled and cut into strips

    stick celery, stringed and sliced

    fresh spinach leaves

    snow peas (mangetout), topped and tailed

    fish sauce

    lime or lemon juice

    roasted peanuts, chopped
 

Method

 
Heat oil. Add lemon grass, garlic and ginger and cook for 1 minute. Add peppers, carrot and celery and stir-fry over high heat for 2 minutes. Add spinach and peas cover and steam for 2 minutes. Stir in fish sauce, lemon juice and peanuts. Serve with steamed rice. Serves 4.
