Lemon delight

    eggs, separated

    castor sugar

    butter or margarine, melted
  • 250
    ml
    milk
  • 10
    ml
    grated lemon rind
  • 80
    ml
    lemon juice
  • 125
    ml
    self-raising flour
  • 125
    ml
    castor sugar, extra
 

Method

 
Preheat oven to 180 °C.
Lightly grease six ramekins or individual ovenproof dishes.
Beat egg yolks and sugar in a small bowl until thick and creamy.
Transfer to a large bowl and stir in butter, milk, lemon rind, juice and sifted flour.
Beat egg whites in a small bowl until stiff peaks form.
Add extra sugar gradually, beating until dissolved after each addition.
Fold into lemon mixture in batches.
Pour mixture into ramekins.
Place in a deep baking dish with enough hot water to come halfway up the sides of the ramekins.
Bake for about 50 minutes or until pudding is set.
Serve warm with custard or whipped cream.
