    olive oil

    chicken breast fillets, cubed
  • 2
    onions, chopped
  • 2
    ml
    cayenne pepper
  • 2
    ml
    hot curry powder
  • 2
    ml
    ground cinnamon
  • 2
    ml
    grated nutmeg
  • 1
    ml
    each ground cumin and ginger
  • salt and milled black pepper
  • 30
    ml
    lemon juice
  • 50
    ml
    water
  • 15
    ml
    finely chopped preserved lemon
  • 150
    g
    green olives (optional)
  • GARNISH
  • parsley
  • red onion (separated into shells)
  • lemon wedges
 

Method

 
Heat olive oil in a casserole dish on top of stove. Brown chicken on both sides. Add onions and sauté until golden. Stir in spices, salt and pepper and cook until chicken is golden brown and sealed. Add lemon juice and water, cover and simmer over very low heat for 30 minutes. Add preserved lemon and olives, if using, and cook for 5 minutes. Serve on couscous or rice, garnished with parsley, red onion shells and lemon wedges.
