Lemon chicken

    chicken pieces
  • salt and freshly ground black pepper
  • 80
    ml
    butter
  • 125
    ml
    (l/2 c) lemon juice
  • 60
    ml
    oil
  • 1
    onion, finely chopped
  • 1
    clove garlic, crushed
  • 5
    ml
    thyme
 

Method

1 hour
 
Preheat the oven to 180 ºC (350 ºF). Season the chicken pieces with salt and pepper. Melt the butter in a large pan and fry the chicken pieces until brown on both sides. Transfer to an oven dish. Blend the remaining ingredients and pour over the chicken. Cover with aluminium foil and bake for 1 hour or until the chicken is tender and done. Remove aluminium foil 20 minutes before the end of the baking time. Serve with rice. Serves 4-6.
