Lemon cheese meringue baskets

    meringue baskets
  • lavender and lemon peel strips to decorate
  • FILLING
  • 250
    ml
    cream cheese or fromage frais
  • 125
    ml
    lemon curd (brought or homemade)
  • 1
    lemon, grated peel
  • 1
    lemon, juice
 

Method

 
FILLING: Put cream cheese in a bowl and add just enough lemon curd for mixture to be fairly thick. Add lemon peel and juice. Pour into the meringue baskets, decorate with strips and lemon peel and lavender and serve.
