Lemon, basil and lime chicken skewers

  • bamboo kebab skewers - soaked in cold water for 20 minutes
  • 2
    plump skinless chicken breasts - cut into 1cm thick slices
  • 175
    plain fat free yoghurt
  • 2
    olive oil
  • 1
    garlic clove - crushed
  • Zest and juice of 1 lemon and 1 lime
  • 1
    grated fresh ginger
  • 1
    dried fresh chilli or 1 chopped de-seeded chilli
  • Handful of chopped fresh coriander or basil
  • Sprinkling of sea salt and black pepper


Put the chicken pieces in a bowl and cover with the yoghurt, olive oil, garlic, lemon and lime zest and juice, ginger, chilli and basil/coriander. Add a generous sprinkle of salt and pepper.

Leave to rest overnight (if you’re organised) or for as long as possible before dinner (if you’re like me).

Thread onto the skewers, folding each chicken piece into a little 'u-shape' and then threading the two ends onto the stick.

Cook on your braai for 4-5 minutes on each side until slightly charred and tender.
