Lemon balm and elder flower sorbet

  • 215
    ml
    castor sugar
  • 575
    ml
    water
  • 2
    sprigs lemon balm
  • 4
    sprigs elder flowers
  • 1
    egg white
  • elder flowers, lemon balm and strips of lemon peel
 

Method

 
1. Place the castor sugar, water, lemon balm and elder flowers into a blender, blend until smooth. 2. Beat the egg whites until stiff, then fold into the sorbet mixture and mix well. 3. Pour the sorbet into a freezer bowl and freeze until the edges are firm. Beat once more and freeze until hard. 4. Remove the sorbet from the freezer about one hour before serving. Decorate with elder flowers, twists of lemon peel and a sprig of lemon balm.
