Lemon and white chocolate biscotti

    cup
    flour
  • tsp
    baking powder
  • ½
    tsp
    salt
  • 3
    eggs
  • 3/4
    cup
    sugar
  • 1
    tsp
    vanilla essence
  • 1
    cup
    coarsely chopped macadamias
  • 300
    g
    white chocolate chips
  • zest of 3 lemons
 

Method

Preheat oven to 180° C.

Mix together the flour, baking powder and salt. Set aside.
   
Beat the eggs, sugar and vanilla essence together until pale and thick. Add the flour mixture beating until just combined.
   
Stir in the nuts, chocolate and lemon zest.
   
Divide the mixture into two. 

Form dough into 3 x 9 inch logs and place on a greased baking tray. Be sure to allow a good space between the two logs as they do expand.
   
Bake for 35 minutes. Remove from the oven and cut diagonal slices ¾ inch thick.
   
Return slices to the baking tray and bake at 150°C for 10 minutes on each side. Careful not to over brown the biscotti.
   
Allow to cool.
